Description

This vibrant and aromatic seafood rice brings together a medley of shrimp, scallops, mussels, and squid with fragrant spices and tender long-grain rice. It’s a balanced, one-pan meal that’s both satisfying and adaptable, perfect for weeknight dinners or casual gatherings.

  • 1 ½ cups long-grain rice (e.g., jasmine or basmati)
  • 1 lb mixed seafood (shrimp, mussels, squid, scallops – cleaned and prepped)
  • 3 cups seafood or chicken stock (low sodium preferred)
  • 1 small onion, finely chopped
  • 1 bell pepper (red or yellow), diced
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp turmeric
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish
  • Lemon wedges, to serve

Instructions

  1. Rinse rice until water runs clear. In a large skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until translucent. Add bell pepper, garlic, and tomato; cook 2 more minutes.

  2. Stir in smoked paprika and turmeric. Add rice and toast for 1–2 minutes.

  3.  Bring to a boil, reduce heat, cover, and simmer for 12–15 minutes.

  4. Layer seafood over the rice, cover again, and cook 5–7 minutes until seafood is opaque and rice is tender.

  5. Let rest for 5 minutes off heat. Garnish with herbs and lemon wedges before serving.

Notes

To enhance the dish, let the bottom layer of rice crisp slightly for a paella-style texture.
