Ingredients
- 1 ½ cups long-grain rice (e.g., jasmine or basmati)
- 1 lb mixed seafood (shrimp, mussels, squid, scallops – cleaned and prepped)
- 3 cups seafood or chicken stock (low sodium preferred)
- 1 small onion, finely chopped
- 1 bell pepper (red or yellow), diced
- 2 cloves garlic, minced
- 1 medium tomato, diced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp turmeric
- Salt and pepper, to taste
- Fresh parsley or cilantro, for garnish
- Lemon wedges, to serve
Instructions
Rinse rice until water runs clear. In a large skillet, heat olive oil over medium heat. Sauté onion for 3–4 minutes until translucent. Add bell pepper, garlic, and tomato; cook 2 more minutes.
Stir in smoked paprika and turmeric. Add rice and toast for 1–2 minutes.
Bring to a boil, reduce heat, cover, and simmer for 12–15 minutes.
Layer seafood over the rice, cover again, and cook 5–7 minutes until seafood is opaque and rice is tender.
Let rest for 5 minutes off heat. Garnish with herbs and lemon wedges before serving.
Notes
To enhance the dish, let the bottom layer of rice crisp slightly for a paella-style texture.
