- 2 boneless chicken breasts, thinly sliced or cubed
- 300g pasta (penne or fettuccine)
- 1 cup heavy cream
- ½ cup sun-dried tomatoes, chopped
- 4 garlic cloves, minced
- ½ cup grated parmesan cheese
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- ½ tsp chili flakes (optional)
- ½ cup chicken broth
Instructions
- Cook pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
- Heat 1 tbsp olive oil in a skillet over medium heat. Season chicken with salt and pepper, then sear until golden and cooked through. Set aside.
- In the same skillet, sauté garlic in remaining oil until fragrant. Add sun-dried tomatoes and chili flakes; cook 1 minute. Pour in chicken broth and simmer for 2–3 minutes.
- Reduce heat and stir in heavy cream. Add parmesan and stir until melted. Loosen sauce with reserved pasta water if needed.
- Return chicken to skillet, add pasta, and toss until well coated. Serve garnished with fresh herbs and extra parmesan.
Notes
For a vegetarian version, replace chicken with sautéed mushrooms or tofu.
