- 1.5–2 lbs flank, skirt, or sirloin steak
- 2–3 chipotle peppers in adobo, minced
- 1 tbsp adobo sauce from the can
- ¼ cup fresh lime juice
- 3 tbsp olive oil or avocado oil
- 4 garlic cloves, minced
- 1 tbsp ground cumin
- 1 tsp dried oregano (Mexican preferred)
- 1 tsp smoked paprika
- 1 tsp salt
- 1 tsp black pepper
Instructions
- In a bowl, whisk together chipotle peppers, adobo sauce, lime juice, oil, garlic, cumin, oregano, paprika, salt, and pepper.
- Place steak in a zip-top bag or shallow dish. Pour marinade over, turning to coat. Cover and refrigerate for at least 1 hour, ideally 4–8 hours to allow flavors to fully develop.
- Preheat grill or cast-iron skillet to high heat. Remove steak from marinade and cook for 4–7 minutes per side, depending on thickness and desired doneness.
- Let steak rest for 10 minutes. Slice thinly against the grain.
- Serve with rice, tortillas, or in salads or bowls.
Notes
Flank or skirt steak works best when marinated and sliced against the grain.
To reduce heat, use fewer chipotle peppers and remove their seeds.
