Instructions

  2. Add chicken thighs, toss to coat, cover, and marinate in the refrigerator for at least 2 hours or overnight.
  3. Heat 1–2 tablespoons of oil in a cast-iron skillet over medium-high heat. Cook chicken in batches for 5–7 minutes per side until charred and fully cooked.
  4. Transfer cooked chicken to a cutting board and let rest for 5–10 minutes.
  5. Slice thinly against the grain and serve warm.
