Description

These zesty gluten free lemon bars feature a buttery shortbread crust and a smooth, vibrant lemon filling. A perfect balance of sweet and tart, they’re ideal for springtime desserts or refreshing treats year-round.


Ingredients

  • 1 ½ cups gluten free flour blend
  • 1/2 cup unsalted halal butter
  • 1/3 cup powdered sugar
  • Pinch of salt
  • 3 large halal eggs
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tbsp gluten free flour
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Mix flour, butter, powdered sugar, and salt to form a crumbly dough. Press into a baking pan and bake for 15 minutes.
  3. In a bowl, whisk eggs, granulated sugar, lemon juice, and 2 tbsp flour until smooth.
  4. Pour over the hot crust and bake for an additional 20 minutes.
  5. Cool completely before slicing and dust with powdered sugar if desired.

Notes

Store in the refrigerator for 4–5 days. Let cool fully before slicing to prevent cracking.
