- 1 ½ cups gluten free flour blend
- 1/2 cup unsalted halal butter
- 1/3 cup powdered sugar
- Pinch of salt
- 3 large halal eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 2 tbsp gluten free flour
- Optional: powdered sugar for dusting
Instructions
- Preheat oven to 180°C (350°F).
- Mix flour, butter, powdered sugar, and salt to form a crumbly dough. Press into a baking pan and bake for 15 minutes.
- In a bowl, whisk eggs, granulated sugar, lemon juice, and 2 tbsp flour until smooth.
- Pour over the hot crust and bake for an additional 20 minutes.
- Cool completely before slicing and dust with powdered sugar if desired.
Notes
Store in the refrigerator for 4–5 days. Let cool fully before slicing to prevent cracking.
