- 2 (6 oz) rockfish fillets
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 lemon, halved
- Salt and black pepper to taste
Instructions
- Pat the rockfish fillets dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat; sear fillets for 3–4 minutes per side until golden and cooked through. Remove from pan.
- Reduce heat to medium-low, melt butter in the skillet, add garlic and cook 30 seconds.
- Turn off heat; stir in herbs and juice of half the lemon.
- Return fish to pan and spoon sauce over fillets. Serve with lemon wedges.

For best results, ensure fish is dry before searing to achieve a crisp, golden crust.
