Classic Pan-Seared Rockfish with Lemon & Herbs

Description

This elegant rockfish recipe is quick to prepare and highlights the fish’s mild, sweet flavor with a buttery lemon-herb sauce. It’s perfect for a light yet satisfying dinner in under 15 minutes.


Ingredients

  • 2 (6 oz) rockfish fillets
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 lemon, halved
  • Salt and black pepper to taste

Instructions

  1. Pat the rockfish fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear fillets for 3–4 minutes per side until golden and cooked through. Remove from pan.
  3. Reduce heat to medium-low, melt butter in the skillet, add garlic and cook 30 seconds.
  4. Turn off heat; stir in herbs and juice of half the lemon.
  5. Return fish to pan and spoon sauce over fillets. Serve with lemon wedges.

Notes

For best results, ensure fish is dry before searing to achieve a crisp, golden crust.
