- 1 lb lean ground beef or ground turkey
- 12 oz spaghetti
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel), undrained
- 1 (8 oz) can tomato sauce
- 1 cup low-sodium beef or chicken broth
- 1 packet (1 oz) taco seasoning or 2–3 tbsp homemade
- 4 oz cream cheese, cubed
- 1–2 cups shredded cheddar or Mexican blend cheese
Instructions
- Cook spaghetti in salted water until al dente. Drain and set aside.
- In a large skillet, brown ground meat with diced onion over medium-high heat for 5–7 minutes. Drain excess fat.
- Add garlic and taco seasoning. Stir for 1 minute. Add diced tomatoes, tomato sauce, and broth. Bring to a simmer.
- Lower heat and stir in cream cheese until smooth and melted.
- Add cooked spaghetti to the skillet and toss to coat. Sprinkle shredded cheese over top, cover, and heat until melted.
Notes
Customize with toppings like sour cream, avocado, cilantro, jalapeños, or crushed tortilla chips.
Use ground turkey for a lighter version.
