Description
These rice paper sushi rolls offer a light and refreshing twist on traditional sushi. Packed with crisp vegetables, creamy avocado, and tender shrimp, they’re quick to make, mess-free, and perfect for healthy lunches or dinners on the go.
Ingredients
- 8 rice paper sheets
- 1/2 cup cooked shrimp, sliced in half
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, sliced
- 4 nori strips
- Soy sauce or ponzu, for dipping
Instructions
Soak one rice paper sheet in warm water until pliable.
Lay a strip of nori in the center of the rice paper.
Layer shrimp, cucumber, carrot, and avocado on top of the nori.
Roll the rice paper tightly like a burrito, tucking in the sides as you go.
Serve immediately with soy sauce or ponzu for dipping.
Notes
You can substitute shrimp with tofu or omit it for a vegetarian version. Keep ingredients dry for easier rolling.
